Bacon Jalapeno Popper Puffs

Do you like bacon encased in warm balls of fried dough, with a little jalapeno for a spicy twist? Perfect, because we’ve got just the thing for you!

Pan fry four strips of bacon, crumble and set them aside with 1/2 cup of jalapenos for the inside of your poppers. Next, mix 2/3 cup of water, three tablespoons of butter and a pinch of salt in your pan and bring the mixture to a simmer. Reduce your heat to medium and pour the flour in, stirring ’til the dough starts to pull together. Transfer this mixture to a mixing bowl and let it cool for about five minutes.

Once the dough is cool, whisk in one egg ’til the mixture separates slightly and pulls back together. Repeat this process with a second egg. Add your bacon and jalapenos to the dough, mix thoroughly, then refrigerate the whole mixture ’til it’s cool—usually in about 30 to 60 minutes!

Next, heat two cups (or more) of vegetable oil to 375 F and use a small scoop to scoop out rounds of dough. Drop the rounds into the oil and cook them ’til they’re golden brown.

Voila! Delicious bacon jalapeno popper puffs! Make sure to serve these with a nice complimentary sauce, like ranch or blue cheese dressing!
